    Default Tagine

    I know tagine cooking pops up every now and again, so I thought we can gather all the bits and pieces together here.

    I saw a cast iron tagine at 40% off at Le Creuset if anyone is currently tagine hunting.

    I popped in at Binuns over the weekend. They have a tagine on sale there for R1600 and something with a cast iron base and a ceramic lid if you are tagine hunting at the moment.

    I'm not, so I don't know why they keep throwing themselves in front of me, but please let us know if you are the one for whom I'm doing all this work.

    Its a sign for you to get one. But do search a bit, there are genuine Tagines available from a number of suppliers at reasonable prices. Or better still, contact Rob (Prof), he knows quite a bit about Tagines and making them.

    I'm unlikely to get one. I'm not opposed to it as a toy to explore, but 1) they take up a lot of space. 2) I'm 'allergic' to spices due to the extreme amount of inflammation that I'm constantly fighting and there's a very short period of the year my body allows their consumption to the extent that Morrocon flavours require. I have quite a number of occasional use toys already and to allocate space to something that some years I may not even be able to use seems not worth it.

    I do have a friend that's deeply in love with hers and uses it multiple times a week, so I'm well aware of how useful they are as a technique.

    But I have enough other toys to achieve those aims. Too many toys, too few days to play with them all.

    I've never cooked in a tangine, although I can imagine being in Morocco when I do?

    It's ideal for low and slow. The dome top allows the steam to rise, get trapped and the top and recirculate which infuses a lot of flavour in the food. Most people get a tagine for a gift, it hangs around and then one day they start using it and then kick themselves for not using it before. Until one day the lid breaks and that is usually the end of their tagine era.

    It's a clever and useful cooking vessel if you have enough cupboard space that the lid is not an issue.
