    Default Marshmallows | Malvalekkers | Camping treats

    Be warned, once you have tasted a fresh marshmallow you will instantly become a marshmallow snob as you realize for the first time how stale the ones in the shops actually are. Luckily they are very easy to make.

    I have waffled on in the technicalities of baking thread regarding the tricky bits if you want to go and have a look there for more information.

    The attachment is a photo how-to that should help you know what it looks like at each stage. Have fun!

    MARSHMALLOWS
    50g gelatin (powder) 80ml
    100ml water for the gelatine
    625ml water for the sugar syrup
    800g sugar (4 cups)
    5ml vanilla extract

    1. Add the gelatin to 100ml water.
    Try to scatter it evenly rather than clumping in a heap.

    2. Heat the sugar and the 625ml water in a thick bottomed pot. Stir continuously until the sugar is dissolved. Bring to the boil over medium heat. Let it simmer until the temperature reaches 118°C.

    3. Remove from the heat immediately and pour the hot sugar syrup down the side of the bowl of the mixer.

    4. Start slow and ensure the gelatin is incorporated fully in the sugar before increasing the speed.

    5. Whip on medium high until thick and glossy. You will wonder if this is it and then suddenly it will thicken. You won't wonder anymore.

    6. You have to work fast at this point as it will want to set fast. Scrape it out of the bowl into your oiled pan/ glass serving dish or prepared surface.
    Shape it into a slab as best you can. Wet your hands in hot water to moisten the top and smooth it out. I also tidy up the sides if it's not in a pan.

    7. Leave it to set for 4 hours or even overnight.

    8. Prepare a mixture of half icing sugar and half cornstarch or rice flour to cover the surfaces of the marshmallow with.

    9. Remove the slab from the pan and cut it in strips. Cut each strip into cubes. Cover the surfaces of each marshmallow with the icing mixture.

    10. Store in an airtight container.

    I have no idea how long they last. I have never managed to keep the hordes away long enough to find out.

    If I am going to put the marshmallows into the fireplace or over the braai fire I often cut them into longer thinner marshmallows so that they don't slide off the stick too easily.

    Dear Emmie,

    I have reasonable kitchen skills and have for a long time been looking for a Marshmallow Recipe.

    I have also been sitting on Forum Post # 19 999 for a while, looking for the ideal post to break my forum hymen.

    Congratulations Keith. That is a lot of words. And what better spend them on than something delicious.

    This is a very forgiving recipe. It takes colouring and flavoring quite well.

    It's really easy. Bloom the gelatin. Boil the sugar syrup. Transfer to the mixer. Transfer to the setting up spot. Cut and powder. Done. Simple.

    I also sometimes make it a bit softer, put it in a piping bag with a plain but widish nozzle and pipe worms. Cut the worms in short, even pieces and voila, mini marshmallows. But become used to the process before you go there.

    One thing I forgot to mention. When removing it from the mixer, don't try to scrape off every bit. The slab will set while you are struggling.

    Just do a quick scrape or two then deal with the slab. If you have a kitchen assistant let them struggle to get it out of the whisk attachment while you deal with the slab.

    And so it came to pass.

    My icing sugar turned out to be castor sugar.

    My baking tray isn’t as big as I thought it was.

    And 8 cups of sugar is a lot of sugar, especially for a household that only keeps a little bit of sugar in the larder for when the Vicar pops around for tea.

    You will be amazed how fast the marshmallows disappear. I have never once struggled to get rid of them after the first taste.

    It's the hinting at when you are making them again that gets to you.

    You mentioned making them straight on your marble slab. How do you contain them to a rectangle.

    It sets as I'm taking it out the mixer. I'm shlopping it out and shaping it with my wet hands to the height I want it to be. Then I just tidy the edges as if I took it from a pan. You have to trim off the edges anyway when you cut them, so it's not really an issue.

    And it gives you something to feed the eager beavers while you are cutting.

    It's thick and barely oozes, so it doesn't run all over the places. I have to use the spatula to help make the rectangle.

    If it's creeping all over you took it off slightly earlier than I did. It will still set, it will just be messier until it does and better off in a glass dish as it might end up thinner and therefore smaller cubes.

    I initially did it in a pan until I realized that I can achieve the same thing without. It's my aversion to struggling things out of pans that made me use the slab. You can stick to a pyrex dish initially.

    Yes I have. Toasted coconut was my gran's favourite too.

    Make sure you have at least 200g of toasted coconut before you go shopping.

    During the cutting step instead of rolling the marshmallows in the icing/ rice flour mixture, roll them in the coconut instead.
