    Default Building a new outside oven and smoker

    I decided that, if I wanted an easier way to fill and ignite the firebox in a Drum smoker, I would have to have a side entry. I had a few bricks and I had an old pizza oven door. This oven is build in such a way that can use it as a smoker or an oven or even a pizza oven if necessary. I have just got to add a Webber rotisserie assembly to it as well. The rotisserie assembly arrives tomorrow by courier. I also added a half shelf for roasting veggies and potatoes.

    Will be trying it out this weekend as have a number of guests coming for late lunch before the rugby.

    Hi Andrew - Just for photo purpose. If doing a smoke I would wrap potatoes in Tin Foil. Some cooking will be done without smoking though.

    Have added a Webber Rotisserie ring and rotisserie unit to smoker / roaster. This will aid giving a more even cook. We will be on point on Saturday but my wife and I will have a trial run on Thursday. Got some good tips from "Jan Braai"

    I love this. A different take on a drum braai/smoker.

    Not many people know that lots of the Weber stuff fits on/inside a standard drum.

    I think I'll steal some of your ideas.

    The rotisserie ring does not quite fit so you need to use the lid clamp the comes with the drum when you purchase it. Don't buy a painted drum. It takes for ages to burn off the smell. i have used a galv drum. i went to the factory in Nelspruit where they make the drums. The Galv one is about R660 Rand. You can get rejects for a lot less.

    Using a pizza door arrangement you can turn the whole set up into a Pizza oven by putting a plough disc scottel upside down on your lowest shelf that I use for the deflector plate. The concave element of the plough disc reflects the heat downwards. I need to add a temp gauge to the door assembly. You don't use a fire box then, but just make a fire in the bottom cavity. I have tiles on the bottom so I can put a Pizza directly onto the hot tiles.
