    Some general comments on liver:

    In days gone by people were hesitant to use pigs liver due to the fact that a free roaming pig would eat basically anything - including feces and could then become infected with tape worm. This could be spread to humans upon eating the liver (in Afr it was called "die lewer het pitjies"). This possibility is negated by freezing prior to consumption.

    The metallic taste of liver comes from the fact that it is filled with blood as it is the the organ that filters the blood. My late mother was lactose intolerant and could therefore not use milk or buttermilk. She used to cut it into strips or small pieces and chuck it in cold water for about 3 hours so as to allow the blood to leech out. Works a charm, I do it to this day.

    My favorite recipe:
    1. Mince the liver together with onion, garlic and bread.
    2. Add black pepper, fine cloves, salt, some chilli flakes (optional) and Worcestershire sauce.
    3. Take the intact intestinal fat of a sheep and spread it open on a (flat) greased oven dish, spoon the (unappetizing-looking) mixture into it, fold the flaps of the intestinal flat closed over the top and chuck it in the freezer.
    4. Once frozen solid, remove from oven dish, put in a plastic bag and keep frozen till needed.
    5. Put frozen liver on a braai-grid and braai over soft coals, turning often so as not to allow the fat to burn. When you think it still has about 5-10 minutes to go,take it off.

    Nie mal oor skaaplewer nie, maar beeslewer is vir ons baie lekker.

    Die verskil lÍ net daarin dat ek gladnie met lewer stukke groot geword het nie.

    Ek hou nie van die are in lewer nie en weet ook nie hoe on dit uit te kry nie.

    Ons het groot geword met lewerkoekies en mash. Maak dit vandag nog soos ma en ouma dit gemaak het

    LEWERKOEKIES:

    +/- 650 g gemaalde bees lewer
    1 middelmatige ui, fyn gekap
    2 eiers
    150 ml koekmeel
    5 ml bakpoeier
    12 Ĺ ml asyn of suurlemoensap
    7 Ĺ ml sout
    knypie wit peper
    5 ml droŽ pieterselie
    Vet of olie om in te braai


    Meng alles goed saam. Verhit `n braaipan en smelt genoeg vet daarin om die boom van pan te bedek.
    Skep die lewermengsel met `n lepel in die warm vet/olie en laat dit aan die een kant bruin braai.
    Draai die koekies versigtig om en laat hulle aan die ander kant bruin braai.
    Bedien met kapok artappels.

    My wife's recipe:

    Soak livers (she likes ox livers) in milk at least a couple of hours and then rinse in clean water.

    Dust livers in flour

    Put in pan and coat with oil and then put butter in the pan

    In the oven 180 for around 20-25 mins

    Comes out with a lovely gravy, serve over mash and fried onions.

    Ek is nie as 'n rŽel 'n lewer eter nie, maar in die jagveld maak ons vars wildslewer met 'n blikkie Spaghetti in tamatiesous in 'n ysterpot op die vuur.

    Absolutely. Nice big piece of crispy chiabatta to soak up the juice.

    However: FIRST pre-fry the liver in good olive oil until medium-rare. Then do the fresh chillis, onions and optional mushrooms. Then add liver back and add the cream. You can add a dash of Old Brown Sherry.

    Lewer in netvet kan bietjie ryk raak en ek is nou soort van oor dit vir n ruk. Maar peri peri livers is altyd lekker.
