    This was just a test to see what would happen in the air fryer, and it came out pretty awesome.

    Alles word in gram gemeet soos in n bakkery
    Gebruik n elektroniese skaal



    Basiese Brood soos Pao en pizza

    Meel 100%

    Water 60% hidrasie werk goed.

    Sout 2%

    Gis 2% pers pakkie werk die vinnigste het ensiemes en vitc in.







    Die hoeveelheid meel bepaal al die res.

    Bv 500g meel =100%

    Water is 500*60%=300g 60% hidrasie nie taai deeg nie

    Sout 500*2%=10g

    Gis 10g een pakkie genoeg vir 1kg meel.









    Wat doen alles in brood.

    Meel 100%

    Bakers ratio
    100 % meel
    60% water
    2 % sout
    162% bymekaar getel
    Jy wil 500g deeg he 500g/162=3.086 * 100% = 308g meel maak n ronde getal 310g
    Werk die res uit van die meel gewig af.
    So skaal jy jou resep op en af om jou pan te pas. Jy kan meer deeg insit hierdie is die minimum om pan vol te maak Hy sal hoer rys as jy meer deeg insit






    As jy n gebak in jou hand het wat is die resep. Weeg dit. Deeg verloor 15% - 20% gewig gedurende produksie. Werk uit hoeveel deeg en pas die bakers ratio toe.

    Papapa secos 85g-120g deeg

    Portuguese buns 75g gebak
    KNP Afsaal roosterkoek 290g gaar 20*9*3

    10 duim pizza = 200g deeg

    260g deeg vir 1l pan

    Soy flour in vetkoek 3- 3,5% keer dat hy olie trek

    Dough that includes 3-3.5% soy flour resists fat when fried.

    Soy flour buns met koekmeel 1-2%

    6 duim 150mm pita/hol vet koek 74g deeg

    4 duim 100mm pita/hol vet koek 50g deeg

    ¾ c – 2c water 192g 80%

    1 pkt yeast 10g 4%

    ½ t sout 2.8g 1.2%
    444.8g 185.2% total




    MELK BROOD

    1kg meel 1000g 100%

    15ml botter 14.38g 1.4%
    2 eiers 120g 12%
    1 gis 10g 1%
    15ml suiker 12.89g 1.2%
    sout 20g 2%

    melk 800g 80%
    1977.27g 197.6%

    1978g gnoeg vir n 8l pan of 2x 4l panne



    As jy nou die 2.5l pan wil gebruik en die hoeveelheid deeg gebruik as die slapbrood.
    445g /197.6%*100 = 225g meel

    Ek gebruik ook melk poeier en aartappel.

    Melkpoeier is 'n sneaky truuk wat mens op allerhande maniere in die kombuis kan gebruik.

    Maar soja kom nie oor my drumpel nie. Nie na van die studies wat ek al gelees het nie. Ek het tot die gevolg gekom dat soja nie vir menslike gebruik is nie.
