    I have done a few on the open braai. I debone and season with salt, pepper, lemon juice, olive oil and woolies lamb rub, leave overnight.
    I bought a 'deep' stainless lid from binuns, used in serving trays, which I put over the meat, on the braai grid, over not too many coles. This helps with the 'oven' effect, and if you use nice wood it gives a smokey taste which is not overpowering. About 2 hours then it is perfect.

    This is what I have done some 3 weeks ago. Prepared the leg-of-lamb (olive oil, salt&pepper, thyme and rosemary) the Saturday and did the braai on Sunday. Took around 2 hrs, came out beautiful. Unfortunately no after fotos. The height adjustment is done by cables on the side. That allows me to have the exact height I need to do the braai with and not burn everything to charcoal. Unfortunately The video file is too big to post and I am not good with posting videos on YouTube.

    Coincidently did this yesterday, wife came home with deboned leg of lamb from Kings meat marinated in rosemary and butter. Did it slowish but really didn't have a clue. I think that was close to the best lamb I have ever tasted. Beautiful.

    The bone in gives it much more flavour, just be patient, takes 3,5 to 4 hours. Hang it next to the fire on a string to let it rotate all the time, not on the direct heat

    I use this Argentinian inspired stand for all our outside bigger cuts as well as whole lamb - always a winner.

    When I was fishing in Patagonia, guide set up camp and roasted a while lamb in the same style as in the pics... Excellent

    Deboned makes it sooo much easier.... a bottle of any cooking wine is essential (will come back to this). Deboned, make up your preferred sauce, put it in the aluminium meat holder, cover and put it "near"the fire where it can cook slowly. At this point, use the cooking wine.. not to cook with, it's for the cook, whilst cooking. Enjoy to the fullest. When ready to braai, take leg out of the meat holder and braai it to perfection on some hot coals! Enjoy

    I like the idea of doing a regop staan leg as well... will try this.

    Definitely worth trying. We have done quite a few deboned boude on the braai. Low & slow. Turn regularly - I aim for every 8 minutes. In my experience this has helped to keep the meat juicy.

    If your cholesterol permits, make your own compound butter and let that melt over the meat just as you take it off. Sny daai ding in skywe en smeer hom vol botter en sous met elke happie... MAN nou is ek honger!

    Hang the whole leg on an Argentian Asado double crucifix [12mm reinforcing rod is perfect as you can bend this backwards or forwards depending on how much heat you want] - hip at the top and knuckles below. Place SS tray below the meat at the base of the crucifix to catch the drippings - add rosemary, lime juice and a dash of coke to the drippings and inject once and then baste the joint

    Asado is part of Argentinian meat eating culture. I experienced this frequently when I played polo for 18 months in Argie, great people & country - and they make us look like amateurs when it comes to eating meat.

    Replace fencing standards with 22mm rebar and you eliminate the need to anchor the crucifix and also you turn the carcass on its axis without having to remove the standard from the ground - far simpler and more efficient method. Bend the crucifix forward or backwards as you require more or less heat.
