Season to taste and mix in. Then add chutney, the garlic and ginger, almonds and sultanas. Mix in well.

When it starts to get tacky and stick to the bottom, remove from heat, retrive the Bay leaves and set aside

Whisk up some eggs and full cream milk till frothy.
Pour over the top gently and evenly. You can pour it over the back of a spoon to stop it from churning up the mince
Arrange the Bay leaves on the top.

Reduce the heat, put the deksel on and afew coals to cook the egg custard.
Pour a dop and give it 15 to 20 minutes before checking if the custard is set
