I'm no sourdough authority but followed this guys directions and almost a year later my starter is as healthy as ever. It has produced many many pizzas, breads, scones and doughnuts.
The best tip I can give though is as Josh says: "trust the process and keep it going" eventually your starter will come to life. I use Eureka stone ground bread flour 50/50 white and wholemeal. At times I've even used the 'bad' straight white flours and it's still going strong. You just need to get it mature before skimping a bit on the feeding.

I'm also on the shiny white dingus with knoppies and goeters (at least it runs on bottled flames!)

    I've never made vetkoek. Never-never-ever.

    Decided tonight's the night.

Made some pukka kerkbazaar yellow mince as filling.

Will post pics of the vetkoek later....

    If I succeed.

And don't burn myself to a frazzle.

Or set the house on fire.

It were almost time but then....
Had a good idea for a potjie of American style chilli in a bowl with sour cream and cheese but first had to do some restoration. No. 4 has been outside in the elements for about a year. Got a good 2 hour vinegar water soak. Then a good work over with a paint scraper. Then some scrubbing only to realise I need more than just elbow grease. Wire brush on a drill would be perfect so I go and get it.... Wire brush set is nowhere to be found. Oh well, bottled flames will have to do until this project continues on another day Click image for larger version.

Okay, so let's do this without the rusted potjie and some coals.

Get a nice sauce base going with onion, garlic, peppers, tomato paste, a diced carrot and some spices.Click image for larger version.

Add to the base and let them get to know each other for a few minutes.

Then add a tin of chopped tomato and go low and slow for an hour. Then add a few pieces of swambo's chocolate when she's not watching.

Add a tin of kidney beans and let it go for another 20 minutes

Then forget to buy the sour cream and change the plan and make like so
