    Sorry Jelo, how rude of me...

    Weight was around the 2,3kg side, so not a large beef rib by any stretch. Time in the offset smoker was around 6 hours (should have gone slower, for longer), temp in the cooker was around 150'c, resting time 1,5hours.

    It was fantastic! But it would have been "softer" had I done it slower, and longer.

    That's how we learn hey! Next time!

    Now, the power is out in Constantia Kloof, so, it's fairy lights, and some good whiskey in the garden!

    Hope everyone is having a bloody marvelous braai day!


    Ahhh, PS, wood used today was Mopani. Was nice!
