I now almost nothing about the subject, but I'd say you need a proper intelligent Battery Charge Controller.
Victron for example.
I'm sure Ekkekan and the other bright okes will come along soon.

I am thinking of getting one of those 12V 120AH LiFePO4 DIY Kits. Now I have read that you should use the correct charger. Their response, "Best would be a charger that allows for adjustable bulk and float settings"
Can you tell me which is the best suited/correct DC-DC and "garage" chargers to use on these products?

I had done exactly the same with building my own batteries. My build is shown in a different thread here. What I opted for on the AC side was the Victron Blue Smart Charger 12/30 and on the DC side went for the National Luna DC-DC 40. Perhaps a bit over kill for your application and could go for the 15A or 20A Victron's and perhaps the NL 25A DC charger.
