Guys, I am looking for an openable panoramic roof (aka moonroof or sunroof), wide enough for both rows of seats. Something like on this video

An aftermarket one can be terrible if not installed correctly .. the wind noise might drive you insane. My dad''s audi and my wife's mini had sunroofs from factory, and the wind noise was kuk on both
It was factory fitted. It’s very quiet inside compared to most sunroofs.
Sunroofs are not meant for SA weather conditions.
My Q7 has a panoramic roof, completed WOFTAM in my opinion and I would have preferred the car without. I went as far as to apply the darkest tint I could to the sunroof to make cabin liveable in South African summer. Car even has a second sunroof for the 3rd row of seats. This one can only be tilted and not opened and is nice to leave open when parked in the sun as it allows some of that hot air in the car to escape.
Maybe once every few months I open the roof if driving speed and weather allows - Thick clouds with no rain and then its nice for a while until the wind noise gets too much and roof gets closed again.

I must agree with this. My Mini had pano roof, with a mesh sliding covers that I imagine someone in Europe thought would help with diffusing harsh light, but it did nothing for the heat. Fortunately it was small and the AC worked very well, but after parking in the sun for a few minutes, that thing was a flippen sauna!
I agree, consider this carefully.

I drive a five cylinder bakkie and tow an army inspired van.
What about convertible soft/rug roofs, did anyone have experience with those? How durable and leaking-proof they are?

The one on my Jeep Wrangler was pretty good, the downside is in our country theft is a real concern so one ends up only using it when you know the car won't be parked in a public place.
I did use the removable front panels quite often as these could be kept in the boot and could be quickly installed when parking in a public place.

Aftermarket fitment will always have issues.

Also remember that if the vehicle wasn't designed for this you will affect the structural integrity. Again unsolicited advise, but something to consider.

Personally that is what I value about the forum, you generally get solid advice even though it isn't always what you wanted to hear in the first place.
