The coffee is far more neutral, but it makes the bread lighter in colour. She also adds an extra tsp of salt and a sprinkling of sunflower and sesame seeds. This is because I don't like the taste of caraway seeds which she omits. https://www.beetsandbones.com/100-rye-sourdough-bread/
    Enjoy!

Thanks Khakibush, used this recipe, used olive oil to coat the pan(had nothing else), this was my first attempt at 100% RYE

I also tried 100% Eureka brown loaf, while experimenting with the rye.

Thanks all for the input and have to agree, it is extremely satisfying, to start seeing the results of something that just started off with some flour and water. I am so glad I could not find instant yeast and was "forced" into this The taste is awesome and I do not get heartburn, which I suffer badly from when eating commercial breads.

    Well done Caesarcp.

It looks fantastic. With the next batch add 2 tables spoons of sesame seed 2 of sunflower. It is an amazing bread. Look forward to your comment with regard to taste.

One of my lockdown projects, learn how to make sourdough bread. I did the starter, worked well and made about 8 loaves so far. Really good from the first one, crust is great. But bread itself quite stodgy, heavy. How can I make the bread lighter? Tried a higher percentage of water, still the same. Using Eureka white bread wheat flour.

You may be baking to hot, crust hardens and stops bread from rising, put a bowl of water into the oven as you put your bread in to create some steam

    I don't trust the "float" trick at-all

If mine is double in size I mix
