    Chop well ripened bananas into chunks of about 3cm long and freeze....when completely frozen you blitz in a food processor until creamy....the healthiest ice cream ever.
    It can be juzed up by adding flavour in the form off peanut butter, maple syrup, frozen mango chunks or any frozen berries .

    Do not store in a plastic bag unless itís perforated. Bananas ripen quickly when in a confined space.

    Best-buy tip for bananas: black spots. When they have been picked too early, they will not ripen properly and often go soft and mushy inside, but if they show black spots on the shelf you can be sure they will be firm and tasty and will last well.

    Correct me if I am wrong.

    The big places have degreening rooms. Like a cold room, but they pump a cocktail of gasses in.

    The idea is to pick early. Be it bananas, citrus, avo's anything. As soon as the sucrose etc is at the right level, they pick. Then the fruit is still very "gree". The skin is. Reason for this is that the loss to bugs is a lot less while the skin is firmer.

    Once it is in the degreening room, it is timed to look good for the market. Rotterdam, Woolies, where ever.

    Problem now is once you initiate this degreening process, it runs. Thus the bananas you pick at home and the bananas at the market don't last the same.

    Last week SWAMBO broke all of them loose, and then put it vertically in a bowl with the stems in water - just about 10mm of water. Still looks like it just came from a tree.

    We have a Guesthouse so we go through a lot of bananas and like them to look inviting and fresh. This is the best way we have found of making them last -
    Firstly we buy them very slightly green.
    Then we wrap the stems in cling wrap and keep them in our National Luna camping freezer, set on 14 deg C, with the lid kept open slightly by a flattened coke can. This is important as you want the ethylene (which causes fruit to ripen quickly) to escape.
    14 is the optimum temp for bananas.
    they last way longer this way.
