"Then there are even places like Sappi forests, surely their firebreaks and powerline clearings offer some awesome tracks? Imagine if we could convince them to open these up for a small fee/permit for entry? "

They will not do this, as an irresponsible fire can cause millions of Rand in damage...
As has been mentioned the Naukluft Park 4X4 route will be a bit of a challenge,
but I have also heard, that it has been closed, due to lack of maintenance,
    Which would provide further challenges.
My wife's opinion of this trail, was that it is worse/tougher than van Zyl's Pass.
Up along the west coast, there is also a nice track, that stays close to the sea,
which can be done over a number of days, but is also possible to do in a single day...

If you're talking a trail suitable for both std and modified, roadworthy vehicles alike, I would definitely recommend Platbank 4x4, 30km north of Vaalwater, Limpopo.

It has a diverse, natural 4x4 terrain with sandy sections, Rocky River beds, mountain routes and solid rock river beds with many river crossings. Definitely my most favourite venue at this point in time. The camping section is really tranquil with awesome scenery.

You'll enjoy all the mountain passes in the Eastern Cape, Maclear-Barkly East-Lady Grey-Rhodes area. Some are pretty hectic - even "closed" [IIRC Bastervoetpad Pass] - with excellent stop-overs in between.
