    TireeTerror, so you are implying that a wood fired pizza oven is slow and just dries out the dough slowly making the pizza experience much poorer and is really just like a dry cracker. With the Weber the pizza lies on a very hot stone, similar to the floor of a wood fired oven, getting heat from all sides, and underneath the base develops little brown spots from the hot stone. That flame thrower device of yours directs heat from the top only, so much so that the topping even caught fire.

    You call yours thin. Our interpretation of the word thin as it applies to pizza bases is obviuosly very different. I prefer a base in the vicinity of 3 mm, not 15 mm as yours appears to be on the snapshot below.

    All this arguing over pizza, is making me hungry for pizza

    And if you can/want to go camping with a portable pizza oven, why on earth not? Looks like good times.

    On a side note, I backpacked around Scotland after military service in the 90s - beautiful country and really nice people.

    Not only that ... there is no wild camping in the UK... some one will shop you to somebody.
    Lusted for a Landy but the Pajero was sexier and bigger in the right departments, just like my Missus.

    What Im suggesting is that the people of Naples know a lot about pizza, authentic pizza. They have a super thin bases with puffed crusts. When stretching the dough, all of the air/gas is pushed outwards to the edges and thats what creates the puffed crust. The Neapolitan base is so thin it is virtually translucent. Its not 15mm thick, I already explained about the edges being thick, but you choose to ignore that, the base is around 3mm thick.

    As for it catching fire, that was our very first time ever using it. It was in fairly strong wind and the back of the unit was facing into it. As I said in the video twice, I had not read the instructions, I just put it together and tried it out. I then read the instructions and saw that its best out of direct wind as it affects the flame.

    All good pizza ovens have the heat blasting over the top, at around 500c. The curved design of traditional wood fired clay ovens means that the heat rolls over the top at around 500c. That, is not possible with a webber, it doesnt even get remotely close to it. You can sure get the stone hot because you are heating it directly from below, but you cannot get the top anywhere near hot enough. Its not open for discussion because Ive seen many pizzas from Webbers and similar style setups and they were all utterly lame. Now when i say lame, I do not mean it tasted horrible and they certainly were ok, but they were lame if comparing to a traditional authentic wood fired Neapolitan pizza.

    Anyway despite all of this, clearly our taste in piizza differs, never have I seen crispy pizzas like displayed in this thread, crispy is more American style. We like the authentic style from Italy which is not crispy at all, more chewy and light. Delicious! Id use that crispy thing as a frisbeee for my dog!

    TireeTerror, When I refer to crispy I refer to the brown spots underneath the base. But be that as it may, perhaps we should agree to disagree and leave it at that.

    You should try smallish pieces of fig jam and Piquanté Peppers (auto-corrected to as the entered term is trademark protected) on a pizza - with other toppings of course. As I said at the outset, ingredients - that makes the pizza. In our part of the woods some people fancy a van der Merwe pizza. That gets biltong pieces on top, but I prefer my biltong as is. (Biltong is comparable to jerky, but made very differently. It is not altogether true that only jerks eats jerky).

    I really like it. I will modify it to run of a generator just as long as the genny can pull the pizza oven and the sound system.

    Actually we make all our pizza bases (and pasta) fresh by hand every day.

    I don’t have a picture of the pizza making process but here’s my staff making raviolis right now:





    You won’t get a really thin crust pizza from a frozen pre made base.



    Oh and we don’t have a walk in freezer.
