    Hi sorry I don't visit the forum that much lately.
    I use:
    01, 5160 and leaf spring (whish is like 5160) these are carbon steels. 5160 stock is very thick. i actually like the edge retention and performance of the 5160.
    440C stainless. it is a old steel. great edge retention and very hard. i feel it resists surface scratches very well. it is a difficult steel to work if u intend to get mirror polished surface. but that makes it scratch resistance

    most SA guys use N690 very similar to 440C but more expensive

    I see Jeremy Schmidt is on Youtube again with his knife grinder.
    What is the general thoughts on this? Worth looking into this with a more curious eye?

    I'm not familiar with this build. I built my own grinder first. The problem I had was getting the proper balanced drive wheels and contact wheels locally. Buying from the knife suppliers is expensive. Thus at the end I bought the Herbst knife grinder.
