    Had a big meal, now a last drink, a warm shower, then I'm gonna sleep like a log.

    My sauce for the chicken came out amazing.

    Melted some salted butter, braaied some finely chopped fresh garlic and some chopped fresh ginger in it. Added about a cup of Thick Soy Sauce, half a cup of Ketchup and 2 Tablespoons of Brown Sugar.

    Cooked till reduced to a thick-ish consistency and applied to chicken while braaing.

    Sekunjalo. Served with jasmine rice and garnished with fresh coriander and spring onions. I think we have this meal in various forms at least every two weeks, sometimes weekly. It varies between green and red curry and cooked with pork or chicken. A top tip a Thai friend told us: after plating squeeze loads of fresh lemon juice over the dish, makes a great difference.

    Love sloppy Joe's.

    Another lekker twist is to make grilled cheese sloppy Joe's.

    Slice of bread, butter on outside, layer of cheese, nice scoop of your mince mix, another layer of cheese, and then top slice of bread, buttered outside.

    Toast in press toaster or fry in pan and flip.

    They come out amazing with super gooey stretchy cheesy-ness

    Cheers with orange juice as we are both on antibiotics.

    It are time, doing a spatchcock tscikken and a piece of fillet with potato salad,coleslaw and a green salad for a lateish lunch today.
