    I remember seeing a TV programme about Gravlax, they buried the fish in the sand above the high water mark to ferment and cure. I am guessing you just used regular smoked salmon? ☺

    well, my understanding of Graved lax is that the salt is the 'graving'

    you bury it in coarse salt and flavorings and leave it for a few days, which leaves it dried out and very firm.

    you then wash it off and slice thinly and serve.

    this one was a half cup of coarse salt, a cup of coarse sugar, lemon juice, tot of decent whisky, heap of dried dill (didn't have fresh)

    wrapped up in cling film and in the fridge for 4 days.

    probably 200g of water came off 1,5kg of good norwegian salmon.

    I don't know if fermentation takes place, but it certainly changes the character of the flesh significantly!
