    So I usually leave the membrane on and make small slits in each muscle structure. Then I make a paste of herb and spices and insert into each pocket between membrane and meat. Then a 50/50 mix of red wine and cranberry juice I inject into each muscle structure. The membrane helps retain this.


    I then put into either the Weber Smokey Mountain (RSA) or a Green Egg ( Zambia Impala shot from stoep) and cook for 6 to 8 hours. I use 2 to 3 spatulas to lift out.

    Add a tin of baked beans, it will offset the salty and tangy flavour of the soya sauce and tomatoes.

    Here's a good tip for a Weber chicken: greek yoghurt and curry spices as you did, rub the whole chicken with the mix, leave it to marinade for 30 minutes, then put in oven or Weber and roast.

    Very underrated method.
