Pork ribs smoked on the kettle braai.

Started out with a dry bbq rub and hot sauce before cooking low and slow with wood smoking chips for about three hours. Kept them moist by spraying an apple cider vinegar, honey and hot sauce mixture every 45 minutes odd.

Finally finished off with a bbq sauce which cooked for another 15 odd minutes a side.

    Served with potatoes and coleslaw.

Really good taste, spicy from the hot sauce and just the right amount of sweet from the bbq sauce. First time trying this out on the kettle braai but worked out really well!

    1,5 cups flour
    1 teaspoon sugar
    Half teaspoon salt
Half teaspoon mustard powder (bit more if so inclined)
    2 teaspoons baking powder
    Good grinding of pepper

Mix the following wet ingredients, add to dry ingredients.

    Half cup of milk
    2 eggs
    45 ml oil
    Can of creamed sweetcorn

Scoop in greased muffin pan and bake in hot oven (200 C) for 20 minutes until just cooked. I think it might work as a type of flapjack on a flat plate on gas or flames as well, but have never tried that. Left overs are nice the next day, or I have made them the day before for padkos the next day.

Potato soup is just potatoes boiled soft in vegetable stock. The potatoes must just be covered in stock. Too much stock and it will be a watery, not creamy soup. Last night I added a few broccoli florets (cauliflower can work too). Then when soft, add a bit of milk and whizz smooth. Add more milk, cream, sour cream or even plain yoghurt for the right consistency. Then I add chopped smoked breasts and as much cheese as a person feels like. Done.
