    Inspired by Brannas Beef Rib on Sunday, I thought an interpretation of concept would be in order. Bought some chuck and blade steak, seasoned and then marinaded. This will go in the Weber on Low N Slow to break down the connective tissues.

    I recon about an hour over indirect heat and then the old Texas Crutch after some spuds onions and carrots are added with a top up of marinade.

    Sounds like a cunning plan Estee And knowing your ninja skills, it will work proper. Still klapping low range with centre diff locked at work, but I shall join you once home. Just me and the teenage laaitie at home tonight, have no idea (apart from the obvious fire and rum) of what will be for supper for him.

    Been just on an hour at 140c. Add some "rustically" cut veg

    Texas Crutch (kind of) and pump the volume to the 180 to 190c mark for anothet 1.5 to 2.0 hours. Rotate 180 in about 30 minutes.

    Texas Crutch (kind of) off and now to reduce sous a bit. Not too much. Meat is falling off the bone which is generally a good sign especially for the tougher cuts.
