    When you got your sear on.........slide to indirect.

    Then place a slotted dis ting in the middle over direct heat. I placed the coals in the middle between 2 rails this time so I have more surface area over coals for the slotted dis ting.

    When the slotted dis ting is lekker hort, chuck on some pok choi and baby spinach seasoned with Porra2goose 5 spice, soy sauce and Worcestershire sauce.

    This is a classic Porra2goose hort salad

    A classic Porra2goose sesame and sweet chilli encrusted pork steak with a hot pok choi and spinach salad seasoned with Porra2goose 5 spice and soy sauce and yellow Hantie's rice with a green lentil dal.

    This genuine Porra2goose recipe came from an Huncle of mine in Goa Hindia. Uncle Vijay Mansingh Jose Maria Perreira.



    Wahahahahahaha.

    Not sure about freezing, never tried that. But we pop the left-overs in a airtight container in the fridge, and after a week they are still amazingly crispy and fresh.

    Thank you Lord its Friday,
    Made some Greek Style Koftas, salad, flat bread, Tahini, yougart with mint & flat bread, plus a few small lamb chops, posting some pics so that you don't get them all at the endClick image for larger version.

    Can definitely be frozen. I always keep a few batches on hand. Portion and freeze is the best way.

    According to the 10 year old female boss...Fridays are for sourdough pizza. So here it are
    Mushroom, Mozzarella and basil pesto
    And
    Chicken, mushroom, basil pesto, a few dollops of plain yoghurt and avo

    Don't mind the slightly uncharred crust. Gas oven, no fan, no grill on the top. I can only do so much.

    Diners, drive-ins & dives inspired burgers
    Cast iron goes onto the flames followed by onions
    Now the 100% beef patties
    The Bombshell made some Mac & cheese and place it in the fridge.
    Once set it was cut into discs
    Flour, egg wash and crumbed the go into a deep fry
