I recognised the method. You must take note: I don't know why the covered stage is necessary and some such finer details. I'm only preparing food in "self-defence" kinda. Although using the round dinges with the deksel is nogal fun and satisfying.

So the cape town weather finally took a breather and let us get outside for a bit. Maak warm.
Some kebabs. Went Turkish on the flavour. Lots of coriander, cumin, black pepper, smoked paprika and sumac.

The carrots fried, a bit of water added to stop them from turning black and then some OBS to deglaze, fold till almost sticky ( a sign that the dop has evaporated I suspect, which by the way is roundabout 78 degrees C) and remove to rest.

The middle eastern Arabic countries use something which looks like 90 degree angle iron as skewers, been eyeing the palisade fencing here on the property and thought those uprights would be perfect if it was a thinner section. Also, the other residents here will frown on me helping myself with a grinder to make some and being galvanised it won't work anyway.
