    Tell us how uncle Estee.
Saute a diced onion and pepper, colour of your choice, in a masala of your choice in a pan. Chuck in a cup of lentils and about 500ml of chicken stock and mix together. As soon as it boils, reduce heat and allow to reduce.

Place lightly oiled and seasoned cauloflower florets on a baking tray and roast at about 195c until they lightly tan. Remove from the tray and place in shallow caserole dish.

When dal liquid has reduced to the point that you think it will start to catch, remove from heat and spoon on top of cauliflower. Mix together. Add green beans to the top and put back in the oven to roast off but keep an eye on it. 10 mins max.

And that it. Takes about an hour in total in prep and cooking.

Tikka was the usual plain yoghurt mixed with a masala and chicken marinaded for 2 hours before being put in a caserole dish.

    Realy tasty.

Lovely stuff Kola, a wood fired oven is an awesome tool to have. I reckon pizza is the last thing one should have to make in them as it is such a versatile implement to do a host of other stuff in. Having said that, tomorrow being Sunday I are making pizzas for the owner of the oven.

This is true, it is really great tool to have.

Pizza is not my favorite, but the rest of the house loves it, so it is a go tomorrow here too.

    Looking good guys.

Does my Venison look too raw?

Just got back from a hunt in Greylingstad. 4 degrees and an icy wind pumping all day. But was great. The wind really challenged the skill-set, so it was satisfying.

Klapping some OBS now to thaw myself.

Nope, its fine like that. Leave in the wind to firm up and chill, thinly slice with a very sharp knaaif and place on a plate. Thinly slaais celery and sprinkle on top and then drizzle with a balsamic reduction and olive oyle and thin slices of parmagiano and you are good to go.

Alternatively, if you have Japanese rice and rice vinegar and a rolling mat (paper with clingfilm on top will suffice), place the thin slices of Bambi on the mat and spoon on the rice and spread evenly. Place cucumber sticks and avo on top and roll. Bushveld sushi Brannas. Blerry awesome.

    Cheers
