Don't let this simple looking pot deceive you, there is some serious ninja moves going on inside.

Mussels with a creamy coconut ligt curry and apricot sauce. Served over spagetti.

I stole the idea of the mussels with this sauce from one of our favorite cuisine restaurants in Jo-burg.

Took a couple of tries to get it right!

You will know this Hermie but for the others who might not- take that dough, roll it flat and cut into thin strips and gooi into the pot like doing with dumplings. Homemade noodles

Hermie. You know the rules. When you come in from left field pulling Ninja moves you have to share the recipe.

    1 tsp sugar
    1 tbs chutney

Although today I did a slightly different version due to the Ina Paarmans Creamy Curry not being available.

I used Ina Paarmans Butter Chicken, 1 tin of coconut milk and 2 teaspoons of apricot jam. I left out the sugar due to using jam.

I cooked the mussels seperately in salty water, then cooled and rinsed under cold water, then added them to the sauce close to serving time.
