    The wors pot keeping cosy, damper goes onto some coals and with a shovel full of coals on the lid. Should be about 25 minutes as the coals are shisa.

    Riaan, why steam the dumplings on a salad leaf? Is it just a separation layer or does it have another function?

    Seperation layer Emmie, otherwise the steamer needs to have a light coating of oil to prevent the dumplings from sticking to the bamboo. I live in a very humid area, so I don't want to contaminate the steamer as it goes rancid very quickly.

    Just for interest. The guys with a Weber Smokey Mountain or normal Weber. 70c is sufficient to get your droewors and billies done in a day. 4.5 to 5 hours by just placing it in the sun, no coals.

    I've actually found that in summer I can use A LOT less coals in the Weber when doing a low and slow compared to Winter. With the lid nice and clean, the internal temps can cook a steak to medium, easily, if you just give it some time.
