    OK, I confess .... I ate one. I know I shouldn't but I had to do some for the Bald headed Englishman. I bought mine while at Twee Rivieren, supplied by the butchery in Uppington. I have had them before. Bloody delicious but really rich.

    Did them slow over the charcoal while at Rooiputs, served with the lamb chops from Mokala farm supplies. I can taste them as I type this, they were crispy on the outside and buttery on the inside, they tasted like lambs liver should taste, once through the crisp, they just melt in your mouth, just the right amount of spice/herbs. Honored them with a Cab sav/Cinsaut blend

    Seem to remember I slept like a baby that night, even though the Lions were calling to each other over the dunes. Must have been content.

    Definitely. Even better if you also cube it, as already suggested.

    The firmness will ensure a smoother cut and helps retain moisture, so not likely to turn into mush.
