Why not have a tank that takes up the whole width of the back seat but has less height (also lowering your C of G) and place the fridge on top or place them next to each other with your ammo crates on top. Unless of course you're planning to have the ammo cases full of something that will have a combined weight equal to that of the water and fridge together.
Each liter of water weighs 1kg so if you have a 250lt tank that's a quarter of a ton you're placing on one side of the vehicle. Don't know how much water you plan to cart around...
Nice build so far though, I'm planning to build my own canopy some time in the (hopefully) not too distant future.
I think I'll look for a slimline tank that can be installed vertically against the rear of the cab, not more than 150 ltr, that'll leave enough room in front of the tank for the battery and possibly also the fridge, haven't bought the fridge yet so I can do some planning around that.
I used Connect-it's to build the bin box and will use it again to build my cab box/tray, it works really well. Was fortunate enough to get the electronic 3D files of the connectors from the supplier so now I can model my projects and have very accurate material take-offs lists.
