    Vidalbum, pectin varies in different fruit which is why it gets added to certain jams.

    Also some (like my family) don't add pectin at all if it doesn't naturally occur in the fruit.

    My gut says 2 opposing things.

    1) Flavour, and nutrients from the molasses. That is my usual bias. Plus lovely caramel from the golden sugar. So yes! Go for it!
