    To thicken mayo add more oil while you are busy making.
    Also, while you make the mayo, the slower you add the oil the thicker the end result.
    To thin, add water - very small amounts at a time.

    We're making our own mayo nearly 15 years now with no problems ever. Keep in mind we live in West Africa so the quality of egg we get here is not close to that in SA and still never had problems....

    We (swambo and I) live in Dark Africa for the past 15+ years. Here you can buy Mayo but it all tastes like fish.
    So we make our own Mayo since 2005.
