(Serves 12)
You will need the following:
No.3 Cast Iron Potjie Pot
2 2.5kg Oxtail
1 pack bacon
10-15 baby potatoes
3 large onions
3 Large tomatoes
Frozen Peas
1 green pepper
4 cloves of garlic (crushed)
Carrots (Pack of baby carrots or about 7 large ones)
2 packets of fresh mushrooms (chopped)
3 tbsp Olive oil
1 Black Label Beer
1 beef/oxtail stock cube
15 ml mixed herbs fresh or dried
Ground pepper, salt, aromat
Worcester / Soya sauce
Oxtail or Brown Onion or Mushroom soup
Method
1. Brown the bacon and onions on high heat in Olive oil and remove once done
2. Brown the oxtail on high heat (while drinking half the Black Label)
3. When the Black Label is ½, the meat should be brown, add the rest of the beer to the po

4. After 2 hours, give the meat a stir then pack the sliced onions and bacon on top of the meat, then the potatoes, (sprinkle aromat and some herbs on the potates), then add the carots. Make sure that the lid is always replaced after adding ingredients. Allow to cook further for another 1 hour
5. Add the tomatoes, green pepper and peas and allow to cook for another 1 hour
6. Add the 2 packs of mushrooms (chopped in ½ or Όs) and ½ pack of soup powder mixed in 100ml of water first and allow to simmer for 15 minutes (this is about the time you put your rice on)
7. When the 15 minutes are up now you can give the pot a good stir mixing all the ingredients, then leave to simmer for another 15 minutes then take the pot inside and leave to stand while you get your salads, plates, rice etc ready.
