Which Landrover Defender would be good to buy and fairly easy
to learn how to work on for someone who never really worked on
cars?

Sounds like you want a hobby, a landy should keep you busy, buy a workshop manual it will show you step by step, even though our british bretheren had some peculiar ideas about mechanics, defenders aren't overly complex, Landyluver should be able to tell you which will be the best mauals

We live in New York but are going to retire in South Africa
Budget is about 96000 Rand.

Yip a 300 Tdi would be ideal, they are getting quite scarse and generally have high milage so would need regular maintenance anyway. They are great engines and if looked after will last a lang time.
