    Default Looking for a specific sweet potato recipe

    I am looking for the Topsy Smit sweet potato recipe. I have somehow lost mine.
    I can recall you cut the sweet potato in madallions, use a flat bottomed pot, add a lot of brown sugar and whatever else.

    I need the original recipe. Anyone that can help? ( it is of the best sweet potatoes you will ever taste )

    We do it your way and add a drop of water, some ginger and a little bit of butter.
    Getting it to a point of syrup without burning it, is not easy but doable.

    I do not know if this helps, it is from Leipoldt's cook book evidently. I was interested in finding Topsy's recipe, as I like old recipes and cookbooks.

    From Michael Olivier’s piece on C Louis Leipoldt's book

    "In his charmingly written recipe for stewed sweet potatoes, the dear man recommends a large lump of sheep’s tail fat, not that you’d find that now. But his description, that they "should be translucent, golden with a slightly brownish tinge [topaz in fact] and exquisitely tender", makes me almost taste them."

    In keeping with the realities of what you find in modern supermarkets, Michael kindly provides a recipe for soetpatats#sans# lump of sheep’s tail fat, and it is this recipe that I use and that I have copied below.

    Gestoofde Soetpatats#(stewed sweet potatoes)

    1kg sweet potatoes

    75 g brown sugar mixed with ground cinnamon, nutmeg and ginger to taste

    100g butter, cut into small blocks

    sea salt

    freshly milled black pepper

    3 or 4 strips of orange rind (use a vegetable peeler and make sure there is no pith attached)

    150ml water

    Preheat the oven to 180C.# Mix the sugar and spices together. In an ovenproof casserole, layer sweet potato slices with the sugar mix.# Top each layer with blocks of butter, strip(s) of orange peel, salt and pepper.# Finish with a layer of sugar and butter.# Pour the water down the side of the casserole and bring to the boil on the stove.# Once it is boiling, cover and cook in the oven for about 45 minutes or until tender.# Return the casserole uncovered to the stove and boil away the liquid until the butter/sugar syrup forms a glaze on the sweet potatoes.# Remove from heat and serve.#

    TOPSI SMIT SE SOETPATATS RESEP
    Gestoofde patats
    Skil en sny vier jong, middelmatige soetpatats in skywe
    Doop skywe in soutwater vir ‘n minuut
    Maak versigtig (deeglik) droog
    Plaas skywe in ‘n dik bodem pot
    Voeg by:
    ‘n groot klont botter
    ‘n koppie heuning of ‘n koppie bruin suiker
    ‘n bietjie gesifte meelblom
    ‘n veertjie pypkaneel
    ‘n bladjie foelie (foelie is die omhulsel van neutmuskaat)
    2˝ ml sout
    Giet 250 ml kookwater oor die patats en laat stadig prut
    Skud die pot nou en dan – moenie roer nie
    Die soetpatas moet deurskyned wees, goudbruin en mondwater sag
    Dit kan bedien word met gebraaide boud, hoender ens, maar nie as nagereg nie

    This is really a wantsomemore dish.

    I would love an English version of that. I get 90% of it but the missing 10% could end up in disaster.

    For instance there is already confusion, for me anyhow, between mace and musk and nutmeg.

    It is mace, the covering of nutmeg.

    If it is not powdered it is a dull orange or red colour. It tastes different to nutmeg. Sort of peppery, although I am.sure nutmeg would be good.

    Do you really want it translated?

    Topsy Smith's stewed sweet potato recipe from Poen

    Peel and slice four young, medium sized sweet potatoes. Dip the slices in salted water for a minute.

    Dry carefully and place in a heavy bottom pan.

    Add the following:

    A big lump of butter
    A cup of honey or a cup of brown sugar
    A little sifted flour
    One cinnamon stick
    A blade of mace
    Half a teaspoon salt
    Add 250ml boiling water

    Bring pot to a slow simmer* but do not stir. Every now and then shake the pot.

    When the sweet potatoes are translucent and golden brown and mouthwateringly soft, it is ready.

    Serve with a roast shoulder or chicken or such, but not as a dessert.

    * The word "Prut" is onomatopoeic - perfectly describing the sound of a bubble bursting through occasionally while on a slow simmer.

    Alopias - well done. I could not have done it better. Just one comment on your use of the word pan, although you do refer to pot further down.

    Thanks Poen! I intend making it for friends in a flat-bottomed cast iron pot and a pot roast and some other dishes I remember such as green beans and mash. And maybe "kloutjies" for desert. (Dumplings in syrup?)

    It brings back such good memories.

    Correct me if I am wrong, but honey instead of sugar as in this recipe is the least harmful of all sweeteners. A combination of honey and cinnamon that has been used for centuries in both traditional Chinese and Ayurveda for diabetes

    It is not recommended, and gives me a 'sugar rush' exactly the same as granulated sugar.

    Sounds good. Do you have a phot perhaps? Also how much flour did you use?
